- 2 x 5oz cans tuna, drained
- 1 medium onion, chopped
- ½ stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil, divided
- ⅓ cup mozzarella cheese, shredded
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna, chopped onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Season with salt and pepper.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Butter one side of a slice of bread and place it in the skillet.
- Spoon about 2 tablespoons of the tuna mixture onto the bread while it browns. Butter another slice of bread on one side and place it on top (buttered side up).
