Ingredients

  • 2 x 5oz cans tuna, drained
  • 1 medium onion, chopped
  • ½ stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil, divided
  • ⅓ cup mozzarella cheese, shredded
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, chopped onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Butter one side of a slice of bread and place it in the skillet.
  3. Spoon about 2 tablespoons of the tuna mixture onto the bread while it browns. Butter another slice of bread on one side and place it on top (buttered side up).
  4. Grill until golden brown on both sides.
