- 8 oz spaghetti (or preferred pasta)
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth (or vegetable broth)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
