  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup chicken or vegetable broth
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat; sauté garlic until fragrant. Add shrimp seasoned with salt, pepper, and red pepper flakes. Cook until pink.
  3. Stir in cherry tomatoes until soft, then add spinach until wilted.
  4. Mix in chicken broth and reserved pasta water; combine with drained spaghetti and adjust seasoning as needed.
