Ingredients
- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tbsp balsamic vinegar
- 3–4 garlic cloves (minced)
- Italian seasoning

Instructions
- Boil salted water in a large pot and cook tortellini according to package instructions until al dente.
- While cooking, chop spinach and halve the cherry tomatoes.
- Once cooked, strain the tortellini and rinse with cool water.
- In a mixing bowl, combine tortellini, spinach, tomatoes, mozzarella, garlic, and basil.
- Drizzle with olive oil and balsamic vinegar; season with Italian seasoning, salt, and pepper. Toss to combine.
- Chill before serving for enhanced flavors.
