  • 2 ripe avocados
  • 1/2 cup precooked black beans (rinsed)
  • 1/4 cup corn
  • 2 tablespoons diced red onion
  • Juice of 1/2 lime
  • 1 garlic clove (minced)
  • 1 teaspoon cumin
  • 1/8 teaspoon crushed red pepper
  • Sea salt to taste
  • Cracked pepper to taste
  • Olive oil

Instructions

  1. In a small bowl, mash the ripe avocados. Mix in minced garlic, sea salt, cracked pepper, lime juice, and crushed red pepper.
  2. Gently fold in chopped cilantro, rinsed black beans, corn, and diced red onion.
